Induction is the fastest and most controllable way to cook on a flat surface, and the cheapest of the electric options to run.

How it works, and why it is quicker

An induction hob heats the pan itself rather than the glass beneath it, so almost none of the energy is wasted warming the surface or the air. Water boils noticeably faster than on ceramic, and the moment you turn it down the heat drops — much closer to gas than a ceramic hob manages.

Will your pans work?

The base has to be magnetic. Put a fridge magnet on the bottom of a pan: if it grips, it will work. Cast iron and most stainless steel are fine; aluminium, copper and glass are not, unless they have a bonded magnetic base.

Safety and cleaning

The surface only gets hot from the pan sitting on it, so spills do not bake on and it wipes clean once the residual heat light goes out. That, plus pan-detection cutting the zone when you lift the pan off, is why induction tends to be the recommendation in a household with young children.
